{"id":59815,"date":"2026-02-22T23:18:37","date_gmt":"2026-02-22T23:18:37","guid":{"rendered":"https:\/\/recipes4thecook.com\/amaretto-rice-pudding"},"modified":"2026-02-22T23:18:37","modified_gmt":"2026-02-22T23:18:37","slug":"amaretto-rice-pudding","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/pudding\/blog\/2026\/02\/22\/amaretto-rice-pudding\/","title":{"rendered":"Amaretto Rice Pudding"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>1\/3 C. dried peaches, chopped<br \/>\n2 Tbsp. amaretto plus 2 tsp.<br \/>\n1\/3 C. white rice, uncooked<br \/>\n2-2\/3 C. evaporated skim milk<br \/>\n1-1\/4 tsp. unsalted butter<br \/>\n2 Tbsp. sugar plus 2 tsp.<br \/>\n2 eggs beaten<br \/>\ncinnamon<br \/>\nnutmeg<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Soak the peaches in the amaretto for 10 minutes. Set aside. Combine the rice, milk,  butter, and sugar in a saucepan. Bring to a boil, lower the heat, and cook until the rice has  absorbed the milk but the mixture is creamy, about 15 to 20 minutes. Stir constantly so  the milk does not curdle. Add the peaches and cook 1 more minute. Remove from the  heat and add eggs. Return to the heat and cook for about 5 minutes until the mixture is  creamy.
