Tapioca Pudding
Ingredients
1/2 C. Minute tapioca
4 C. skim milk
6 Tbsp. Sugar Twin
2 egg whites
2 tsp. vanilla extract
3 Tbsp. Hershey’s cocoa powder (optional)
Cooking Instructions
Combine all ingredients in medium saucepan. Stir to blend. Let stand 5 minutes. Cook, stirring constantly, over medium heat until mixture comes to a full boil; pudding thickens as it cools. Remove from heat. Cool 20 minutes. Stir. Serve warm or chilled. For chocolate tapioca add 3 Tbls. Hershey’s cocoa powder to pudding.
