Banana Date Pudding
Ingredients
1 C. chopped dates
2 C. boiling water
2/3 C. cashews
1/8 tsp. salt
3 Tbsp. cornstarch
1 C. water
1 1/2 tsp. vanilla
2 sliced bananas
Cooking Instructions
Pour boiling water over dates, cover. Let stand about 5 minutes then blend smooth. Empty into a saucepan. Blend smooth remaining ingredients, except bananas. Add to saucepan, lightly boil until thick, stirring, about 10 minutes. Stir in sliced bananas.
