{"id":8949,"date":"2026-02-15T18:57:23","date_gmt":"2026-02-15T18:57:23","guid":{"rendered":"https:\/\/recipe4thecook.com\/\/"},"modified":"2026-02-15T18:57:23","modified_gmt":"2026-02-15T18:57:23","slug":"velvet-chicken","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/poultry\/blog\/2026\/02\/15\/velvet-chicken\/","title":{"rendered":"Velvet Chicken"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>1 chicken breast, diced<br \/>\n1 Tbsp. oil<br \/>\n2\/3 C. stock<br \/>\n3 tsp. cornstarch<br \/>\n1\/2 lb. small mushrooms<br \/>\n1 tsp. salt<br \/>\n1\/4- inch piece of fresh ginger, chopped<br \/>\n1 tsp. pepper<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Mix the chicken pieces in a bowl with 1 tsp. cornstarch, 1 Tbls. oil, 1\/2 tsp. salt and 1\/2 tsp. pepper. Let sit. Pour the boiling stock over the mushrooms in another bowl and stir in 2 tsp. cornstarch, 1\/2 tsp. salt and 1\/2 tsp. pepper. Quick fry the chicken, over high heat for 30 seconds then add the mushroom mixture and the ginger. Stir constantly until just done, for not more than 5 minutes, over medium heat.
