{"id":8791,"date":"2026-02-15T18:57:11","date_gmt":"2026-02-15T18:57:11","guid":{"rendered":"https:\/\/recipe4thecook.com\/\/"},"modified":"2026-02-15T18:57:11","modified_gmt":"2026-02-15T18:57:11","slug":"stir-fried-chicken-and-zucchini","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/poultry\/blog\/2026\/02\/15\/stir-fried-chicken-and-zucchini\/","title":{"rendered":"Stir Fried Chicken And Zucchini"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>2 whole chicken breasts, skinned, boned and cut into thin strips.<br \/>\npepper<br \/>\n2 Tbsp. oil<br \/>\n2 Tbsp. butter or margarine<br \/>\n1\/4 tsp. minced garlic<br \/>\n1 medium onion; sliced<br \/>\n3\/4 lb. zucchini; thinly sliced<br \/>\n1\/2 lb. mushrooms; sliced<br \/>\n1\/2 C. shredded carrot<br \/>\npeel and juice of 1\/2 lemon<br \/>\n1\/2 C. walnut halves<br \/>\nhot cooked rice (optional)<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Season chicken with pepper to taste. In large skillet, stir-fry chicken in oil until lightly browned and tender. Remove chicken from pan and set aside. Add butter to pan and stir-fry garlic and onion until onion is just tender. Add zucchini, mushrooms and carrot and stir-fry over medium heat 3 minutes. Add chicken and heat through. Stir in lemon peel and juice and walnut halves. Toss to mix.
