{"id":8718,"date":"2026-02-15T18:57:10","date_gmt":"2026-02-15T18:57:10","guid":{"rendered":"https:\/\/recipe4thecook.com\/\/"},"modified":"2026-02-15T18:57:10","modified_gmt":"2026-02-15T18:57:10","slug":"sauteed-turkey-with-citrus-currant-sauce","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/poultry\/blog\/2026\/02\/15\/sauteed-turkey-with-citrus-currant-sauce\/","title":{"rendered":"sauteed Turkey With Citrus Currant Sauce"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>2 tsp. olive oil<br \/>\n1 lb. turkey fillet slices<br \/>\n1\/2 tsp. salt<br \/>\nfresh ground pepper to taste<br \/>\n3\/4 C. orange juice<br \/>\n2 Tbsp. lemon juice<br \/>\n2 Tbsp. currant jelly<br \/>\n1\/2 tsp. dried tarragon, crushed<br \/>\n1 Tbsp. butter<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>In a large skillet, heat the oil, half a tsp. at a time and cook the turkey in 4 batches over medium high heat for about 2 minutes on each side or until cooked. Sprinkle with about half the salt and pepper. Remove from the pan and hold in a warm oven. Turn the heat to high and pour in the orange juice and lemon juice; stir in the currant jelly, tarragon and the remaining salt and pepper. Boil until slightly thickened, for about 4 minutes. Stir in any juices that have collected around the turkey and boil for 1 minute. Remove the pan from the heat and swirl in the butter.
