{"id":8558,"date":"2026-02-15T18:57:08","date_gmt":"2026-02-15T18:57:08","guid":{"rendered":"https:\/\/recipe4thecook.com\/\/"},"modified":"2026-02-15T18:57:08","modified_gmt":"2026-02-15T18:57:08","slug":"lemon-pineapple-peking-style-chicken","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/poultry\/blog\/2026\/02\/15\/lemon-pineapple-peking-style-chicken\/","title":{"rendered":"Lemon Pineapple Peking Style Chicken"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>2 (8-oz. each) boned, skinless chicken breasts<br \/>\n2 Tbsp. chicken bouillon<br \/>\n1 Tbsp. soy sauce<br \/>\n1 garlic clove, crushed<br \/>\n3\/4 tsp. salt<br \/>\n2 tsp. cornstarch<br \/>\n2 Tbsp. lemon juice<br \/>\n1\/4 C. plus<br \/>\n1 Tbsp. cider or rice vinegar<br \/>\n1 C. canned pineapple chunks (no sugar added)<br \/>\n1\/2 C. grated carrot<br \/>\n1 medium green pepper, cut into 1-1\/2-inch squares<br \/>\n1 tsp. grated lemon rind<br \/>\n1 C. shredded lettuce<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Preheat broiler. Wash chicken and wipe dry. Combine bouillon, soy sauce, garlic and salt in a shallow dish. Place chicken in marinade and spread with fingers. Let stand for 15 minutes, turning occasionally so that entire surface of chicken gets coated. Broil on rack 4 inches from heat, turning once until done on both sides. While chicken is broiling, prepare the sauce: Stir cornstarch into lemon juice; combine with water and vinegar in a saucepan. Add pineapple, carrot, green pepper and lemon rind. Bring to a boil. Lower heat and simmer until thickened. When chicken is broiled, place on two individual serving plates. Pour Lemon-pineapple sauce over chicken.
