{"id":8314,"date":"2026-02-15T18:56:55","date_gmt":"2026-02-15T18:56:55","guid":{"rendered":"https:\/\/recipe4thecook.com\/\/"},"modified":"2026-02-15T18:56:55","modified_gmt":"2026-02-15T18:56:55","slug":"chicken-with-peach-salsa","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/poultry\/blog\/2026\/02\/15\/chicken-with-peach-salsa\/","title":{"rendered":"Chicken With Peach Salsa"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>vegetable cooking spray<br \/>\n1\/2 C. chopped onion<br \/>\n14-1\/2-oz. can whole tomatoes; drained, chopped<br \/>\n2\/3 C. diced peaches<br \/>\n1\/2 C. peach preserves<br \/>\n1 cinnamon stick<br \/>\n1 Tbsp. chopped fresh cilantro or 1 tsp. dried cilantro<br \/>\n1 tsp. chopped fresh ginger root or 1\/4 tsp. ginger<br \/>\n1\/4 tsp. salt<br \/>\n1\/8 tsp. pepper<br \/>\n3 whole chicken breasts; skinned, boned, halved<br \/>\n3 C. cooked rice<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Spray medium non-stick saucepan with cooking spray. Heat over medium heat until hot. Add onion; cook and stir for 3 minutes. Add next 8 ingredients. Bring to boiling; reduce heat. Simmer uncovered 20 to 30 minutes or until sauce thickens, stirring occasionally. Keep salsa warm. When ready to serve, remove and discard cinnamon stick. Meanwhile, broil chicken 4 to 6 inches from heat for 18 to 23 minutes or until chicken is fork-tender and juices run clear, turning once halfway through broiling.
