{"id":8108,"date":"2026-02-15T18:56:53","date_gmt":"2026-02-15T18:56:53","guid":{"rendered":"https:\/\/recipe4thecook.com\/\/"},"modified":"2026-02-15T18:56:53","modified_gmt":"2026-02-15T18:56:53","slug":"champagne-chicken","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/poultry\/blog\/2026\/02\/15\/champagne-chicken\/","title":{"rendered":"Champagne Chicken"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>3 chicken breasts; boneless, skinned<br \/>\n2 Tbsp. olive oil<br \/>\n2 Tbsp. butter<br \/>\n1\/4 C. champagne; dry<br \/>\n1\/2 C. heavy cream<br \/>\n3 Tbsp. fresh tarragon, (1 tsp. dry)<br \/>\nsalt and freshly ground pepper<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Cut chicken into 1\/4-inch wide slices. Melt the butter and olive oil in a large heavy skillet. Saute the chicken for 4 to 5 minutes. Remove the chicken and keep warm. Deglaze the pan with the champagne. Add the cream to the pan. Add the tarragon and reduce the sauce for two minutes. Put the chicken back into the pan and bring just to a simmer. Remove to serving platter.
