Turkey Frittata
Ingredients
1/2 C. sliced onion
1 garlic clove, minced
1 Tbsp. oil
1 C. sliced mushrooms
1 C. frozen chopped spinach, dry
2 Tbsp. lemon juice
1/8 tsp. ground black pepper
1 C. chopped turkey
6 eggs beaten
Cooking Instructions
Defrost and squeeze spinach dry. Saute the onion, garlic and mushrooms in the oil for 5 minutes. Add the spinach, lemon juice and pepper. Cook over low heat for 3 minutes. Add the turkey and eggs to the spinach mixture. Pour into a greased 9-inch round baking dish. Bake in 350 oven for 25 to 30 minutes or until eggs are set. Cut into wedges to serve.
