{"id":67,"date":"2026-02-22T23:24:28","date_gmt":"2026-02-22T23:24:28","guid":{"rendered":"https:\/\/recipes4thecook.com\/italian-potato-salad"},"modified":"2026-02-22T23:24:28","modified_gmt":"2026-02-22T23:24:28","slug":"italian-potato-salad","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/potato\/blog\/2026\/02\/22\/italian-potato-salad\/","title":{"rendered":"Italian Potato Salad"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>24 new red potatoes, 3 to 4 oz. each, washed with skins left on<br \/>\n3 stalks celery, chopped<br \/>\n1 red bell pepper, minced<br \/>\n1\/4 C. chopped scallions, or young green onions<br \/>\n2 Tbsp. olive oil<br \/>\n1 Tbsp. balsamic vinegar<br \/>\n1\/2 Tbsp. red vinegar<br \/>\n1 tsp. fresh parsley<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Boil the potatoes for 20 minutes in a large pot of boiling water. Drain and let cool for 30  minutes. Cut cooled potatoes into large chunks and toss them with the celery, red pepper  and scallions. Combine all the dressing ingredients and pour over the potato salad.
