{"id":55,"date":"2026-02-22T23:24:28","date_gmt":"2026-02-22T23:24:28","guid":{"rendered":"https:\/\/recipes4thecook.com\/gourmet-potatoes"},"modified":"2026-02-22T23:24:28","modified_gmt":"2026-02-22T23:24:28","slug":"gourmet-potatoes","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/potato\/blog\/2026\/02\/22\/gourmet-potatoes\/","title":{"rendered":"Gourmet Potatoes"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>6 med. potatoes<br \/>\n2 C. shredded cheddar cheese<br \/>\n1\/4 C. butter<br \/>\n1 1\/2 C. sour cream<br \/>\n1\/3 C. green onions, chopped fine<br \/>\n1 tsp. salt<br \/>\n1\/4 tsp. pepper<br \/>\n2 Tbsp. butter<br \/>\npaprika<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Cook potatoes in skins; cool. Peel and shred coarsely. In a  saucepan over low heat, combine cheese and 1\/4 C. butter. Stir  occasionally until almost melted. Remove from heat and blend in  sour cream, onion and seasonings. Fold in potatoes and turn into  a greased 2 qt. casserole. Dot with 2 Tbsp. butter and sprinkle  with paprika. Bake uncovered in a 350\u00ba oven for 30 minutes or  until heated through.
