{"id":49,"date":"2026-02-22T23:24:28","date_gmt":"2026-02-22T23:24:28","guid":{"rendered":"https:\/\/recipes4thecook.com\/garlic-mashed-potatoes"},"modified":"2026-02-22T23:24:28","modified_gmt":"2026-02-22T23:24:28","slug":"garlic-mashed-potatoes","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/potato\/blog\/2026\/02\/22\/garlic-mashed-potatoes\/","title":{"rendered":"Garlic Mashed Potatoes"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>2 heads garlic, peeled<br \/>\n1\/4 lb butter<br \/>\n2 Tbsp. flour<br \/>\n1 C. milk or chicken stock<br \/>\n2 to 3 lb. baking potatoes, peeled and quartered<br \/>\nsalt and pepper to taste<br \/>\n2 to 4 Tbsp. heavy cream<br \/>\nchopped parsley<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Combine the garlic and half the butter in a small, heavy saucepan overlow heat and cook covered for 20 to 30 minutes, until the garlic is very soft but not browned. Stir in the flour and cook for 3 minutes. Stir in the milk and bring to a boil, stirring frequently.  Rub the sauce through a sieve or puree in an electric blender or food processor. Meanwhile, boil the potatoes in salted water until they are tender. Drain and mash thoroughly or put through a potato ricer. In a large pot over low heat, stir the potatoes to remove some of the moisture, and stir in the remaining butter, salt, and pepper. Stir the garlic sauce into the potatoes shortly before serving, and adjust the consistency with heavy cream. Garnish with chopped parsley.
