{"id":7694,"date":"2026-02-15T18:54:53","date_gmt":"2026-02-15T18:54:53","guid":{"rendered":"https:\/\/recipe4thecook.com\/\/"},"modified":"2026-02-15T18:54:53","modified_gmt":"2026-02-15T18:54:53","slug":"pesto-potato-sausage-salad","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/pork\/blog\/2026\/02\/15\/pesto-potato-sausage-salad\/","title":{"rendered":"Pesto Potato Sausage Salad"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>1 1\/2 pound red potatoes; small, halved or quartered if large<br \/>\n1 pound smoked hot sausage or kielbasa<br \/>\n1 pint cherry tomatoes; halved<br \/>\n2 Tbsp. red-wine vinegar<br \/>\n1\/3 C. prepared pesto<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>In large skillet, combine potatoes with enough salted water to cover. Heat to boiling;  simmer until tender. about 12 minutes. Drain; place in large bowl. Halve sausage  lengthwise; cut crosswise into 1\/2 inch diagonal slices. In skillet used to cook potatoes,  Saute sausage over medium-heat until browned, about 10 minutes. With slotted spoon,  transfer to bowl with potatoes; add tomatoes. In small bowl, combine vinegar, pesto, and  1\/2 tsp. freshly ground pepper; mix. Add to potato mixture; toss.
