{"id":7485,"date":"2026-02-15T18:54:51","date_gmt":"2026-02-15T18:54:51","guid":{"rendered":"https:\/\/recipe4thecook.com\/\/"},"modified":"2026-02-15T18:54:51","modified_gmt":"2026-02-15T18:54:51","slug":"chicken-and-sausage-gumbo-2","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/pork\/blog\/2026\/02\/15\/chicken-and-sausage-gumbo-2\/","title":{"rendered":"Chicken And Sausage Gumbo 2"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>1\/3 C. all-purpose flour<br \/>\n1\/3 C. cooking oil<br \/>\n3 C. water<br \/>\n12 ounce fully cooked smoked sausage links, sliced and quartered<br \/>\n2 C. chopped cooked chicken<br \/>\n2 C. sliced okra or one 10-ounce package frozen whole okra, sliced<br \/>\n1\/2 inch thick<br \/>\n1 C. chopped onion<br \/>\n1\/2 C. chopped green pepper<br \/>\n1\/2 C. chopped celery<br \/>\n4 cloves garlic, minced<br \/>\n1 tsp. salt<br \/>\n1\/2 tsp. pepper<br \/>\n1\/4 tsp. ground red pepper<br \/>\nhot cooked rice<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>For roux, in a heavy 2-quart saucepan stir together flour and oil till smooth. Cook over  medium-high heat 5 minutes, stirring constantly. Reduce heat to medium. Cook and stir  constantly about 15 minutes more or till a dark, reddish brown roux forms. Cool. In a 3  1\/2, 4, 5, or 6 quart crockery cooker place water. Stir in roux. Add sausage, chicken, okra,  onion, green pepper, celery, garlic, salt, pepper, and red pepper. Cover; cook on low-heat  setting for 10-12 hours or on high-heat setting for 4 1\/2 to 5 hours. Skim off fat.
