{"id":7124,"date":"2026-02-15T18:53:15","date_gmt":"2026-02-15T18:53:15","guid":{"rendered":"https:\/\/recipe4thecook.com\/\/"},"modified":"2026-02-15T18:53:15","modified_gmt":"2026-02-15T18:53:15","slug":"grilled-red-snapper-with-sauteed-vegetables","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/outdoor\/blog\/2026\/02\/15\/grilled-red-snapper-with-sauteed-vegetables\/","title":{"rendered":"Grilled  Red  Snapper  With  Sauteed  Vegetables"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>Lime Butter Sauce<br \/>\n1 med. onion, finely chopped (about 1\/2 C.)<br \/>\n2 cloves garlic, finely chopped<br \/>\n1\/4 C. margarine or butter<br \/>\n4 very sm. patty pan squash (about 4 oz. each) cut in half<br \/>\n2 sm. zucchini, cut into 1\/4&#8243; strips<br \/>\n2 sm. yellow squash, cut into 1\/4&#8243; strips<br \/>\n1 med. chayote, pared, seeded &amp; cut into 1\/2&#8243; cubes<br \/>\n1 sm. red bell pepper, cut into thin rings<br \/>\n1 sm. yellow bell pepper, cut into thin rings<br \/>\n1\/2 tsp. salt<br \/>\n1\/4 tsp. ground red pepper<br \/>\n8 red snapper or cod fillets (about 5 oz. each)<br \/>\n1\/4 C. vegetable oil<br \/>\nSalt &amp; pepper to taste<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Prepare Lime Butter Sauce; reserve.  Cook and stir onion and garlic in margarine in 4 quart Dutch oven until onion is tender.  Stir in vegetables, 1\/2 teaspoon salt and the red pepper.  Cook over medium heat, stirring occasionally, until vegetables are crisp-tender; keep warm.  Brush fish fillets generously with oil.  Sprinkle with salt and pepper.  Grill over medium coals 10-12 minutes or until fish flakes easily with fork.
