{"id":125,"date":"2026-02-22T23:28:07","date_gmt":"2026-02-22T23:28:07","guid":{"rendered":"https:\/\/recipes4thecook.com\/rigatoni-with-vegetables"},"modified":"2026-02-22T23:28:07","modified_gmt":"2026-02-22T23:28:07","slug":"rigatoni-with-vegetables","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/noodle\/blog\/2026\/02\/22\/rigatoni-with-vegetables\/","title":{"rendered":"Rigatoni With Vegetables"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>vegetable cooking spray<br \/>\n2 tsp. olive oil, garlic flavor<br \/>\n1 eggplant (about 1 pound), peeled and cubed<br \/>\n2 medium zucchini, cubed<br \/>\n10 oz. fresh mushrooms, diced<br \/>\n1 medium onion, diced<br \/>\n1\/2 tsp. salt<br \/>\n1\/4 tsp. freshly ground pepper<br \/>\n2 C. prepared marinara s<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Heat oven to 450 degrees F. Lightly coat 2 jellyroll pans with vegetable cooking spray.  Drizzle oil over eggplant, zucchini, mushrooms and onion; toss. Arrange vegetables on  both pans. Sprinkle with salt and pepper. Roast 30 minutes, until vegetables are tender.  Reduce oven temperature to 400 degrees F. Spread 1\/2 C. sauce over bottom of baking  dish, 13 by 9 inches. Combine pasta, vegetables, 1 C. sauce, and parmesan in bowl.  Spoon into prepared dish. Spread remaining 1\/2 C. sauce over top; sprinkle with  mozzarella cheese. Bake 20 to 25 minutes, until bubbly.
