{"id":108,"date":"2026-02-22T23:28:07","date_gmt":"2026-02-22T23:28:07","guid":{"rendered":"https:\/\/recipes4thecook.com\/pasta-with-spinach-sausage-and-roquefort-cream-sau"},"modified":"2026-02-22T23:28:07","modified_gmt":"2026-02-22T23:28:07","slug":"pasta-with-spinach-sausage-and-roquefort-cream-sau","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/noodle\/blog\/2026\/02\/22\/pasta-with-spinach-sausage-and-roquefort-cream-sau\/","title":{"rendered":"Pasta With Spinach Sausage And Roquefort Cream Sau"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>1\/4 C. olive oil<br \/>\n4 ounce hot italian sausage<br \/>\n8 ounce mushrooms; sliced<br \/>\n2 bunch fresh spinach<br \/>\n2 garlic cloves; minced<br \/>\n1\/4 C. coarsely chopped walnuts<br \/>\n2 C. whipping cream<br \/>\n4 ounce roquefort cheese<br \/>\n2 tsp. dijon mustard<br \/>\n1 pound fettuccine<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Heat oil in heavy large skillet over medium-high heat. Add sausage and cook until no  longer pink, crumbling with fork, about 5 minutes. Transfer sausage to bowl using slotted  spoon. Add mushrooms to skillet and e  2 minutes. Add spinach and e  until  wilted. Add garlic and walnuts and stir 1 minute. Add cream and Roquefort and bring to  boil. Reduce heat and simmer until thickened to sauce consistency, stirring occasionally,  about 10 minutes. Add sausage and mustard. Season to taste with salt and pepper. Stir  sauce until heated through. Meanwhile, cook pasta in large pot of boiling salted water  until just tender but still firm to bite, stirring occasionally. Drain. Place in large bowl.  Pour sauce over pasta.
