Pumpkin Bread
Ingredients
1 1/2 C. sugar
1/3 C. salad oil
2 eggs
1 C. canned pumpkin
1 1/2 C. all purpose flour
3/4 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. cloves
1/2 tsp. allspice
1 tsp. baking soda
1/4 tsp. baking powder
1/2 C. chopped walnuts
Cooking Instructions
In large mixing bowl, blend sugar, oil, eggs, and pumpkin. When ingredients are well mixed, stir in flour, salt, cinnamon, nutmeg, cloves, allspice, baking soda, and baking powder; blending well. Stir in walnuts. Pour batter into an 8 x 14 inch glass dish. Cook 12 to 14 minutes, rotating dish one quarter turn every 4 minutes. Knife inserted in the center should come out clean when bread is done. Rest 5 minutes and remove from pan. Serve either warm with butter or cream cheese.
