Applesauce Cake
Ingredients
1 C. packed brown sugar
1/2 C. margarine or butter
1 egg
1 C. unsweetened applesauce
1 1/4 C. all-purpose flour
1 tsp. ground cinnamon
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground cloves
1/2 tsp. ground nutmeg
1/2 tsp. ground allspice
1/2 C. raisins
Cooking Instructions
1. Lightly grease 8-10 cup baking ring. Beat brown sugar and margarine until smooth. Beat in egg. Stir in applesauce. Mix in flour, cinnamon, baking soda, salt, cloves, nutmeg and allspice. Stir in raisins. 2. Pour batter into baking ring. Microwave at medium-high (70%) 4 minutes. Increase power to high (100%). Microwave until wooden pick inserted in center comes out clean, 4-7 minutes. Cool 5 minutes. Invert onto serving plate. Makes 1 ring cake.
