Italian Skillet Turkey Sausage
Ingredients
2 tsp. olive oil, divided
1 lb. italian turkey sausage
1 egg, beaten (or substitute)
1 lemon peel, grated
6 Tbsp. italian breadcrumbs
2 C. plain tomato sauce
3 basil leaves, chopped
1 pinch fresh minced oregano
4 slices part-skim mozzarella cheese
Cooking Instructions
Spray large non-stick skillet with cooking spray and add 1 tsp. of the olive oil. Combine turkey sausage with egg and lemon peel; mix lightly. Sprinkle bread crumbs on shallow plate. Shape 1/4 of meat mixture into flat patty and press into crumbs, lightly coating both sides. Make 3 more coated patties with remaining meat and crumbs. Brown patties in skillet over moderate heat, for about 2 to 3 minutes. Add remaining tsp. of oil and turn to brown other side evenly. Mix tomato sauce with herbs. Top each with sauce and a slice of mozzarella.
