{"id":6411,"date":"2026-02-15T18:50:03","date_gmt":"2026-02-15T18:50:03","guid":{"rendered":"https:\/\/recipe4thecook.com\/\/"},"modified":"2026-02-15T18:50:03","modified_gmt":"2026-02-15T18:50:03","slug":"taco-casserole-2","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/hamburger\/blog\/2026\/02\/15\/taco-casserole-2\/","title":{"rendered":"Taco  Casserole"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>1 lb. ground beef<br \/>\n1\/2 C. chopped onion<br \/>\n1 (8 oz.) can tomato sauce<br \/>\n1\/3 C. water<br \/>\n1 env. taco seasoning mix<br \/>\n2 eggs<br \/>\n1 C. milk<br \/>\n1 (16 oz.) can red kidney beans, drained<br \/>\n2 C. Monterey Jack cheese, shredded<br \/>\n10 taco or tostada shells, coarsely crushed (should be 2 1\/2 C.)<br \/>\n1 C. shredded lettuce<br \/>\n1 sm. tomato, chopped<br \/>\n1\/4 C. sliced pitted ripe black olives (optional)<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>In large skillet brown ground beef and onion.  Drain off excess grease.  Stir in tomato sauce, water and taco seasoning mix.  Heat thoroughly.  Remove from heat.  In mixing bowl, beat eggs.  Stir in milk.  Add a small amount of the hamburger mixture to the egg mixture, stirring constantly.  Return all to the skillet.  Stir in kidney beans, 1 1\/2 cups of cheese and the crushed shells.  Turn into 12 x 7 1\/2 x 2 inch baking dish.  Bake at 350 degrees for about 30 minutes.  Top with lettuce, the remaining cheese, tomato and olives.
