Use the<br \/>\nemulsion to marinate the meat for 2-3 hours, refrigerated. Longer<br \/>\nmarinading before cooking does not improve the meat as the remaining<br \/>\nbear fat will go rancid despite refrigeration. Grill, broil or saut\u00e9<br \/>\nthe steaks until WELL DONE. Bear should always be thoroughly cooked<br \/>\nas a trichinosis precaution.
