{"id":19,"date":"2026-02-22T22:57:59","date_gmt":"2026-02-22T22:57:59","guid":{"rendered":"https:\/\/recipes4thecook.com\/cauliflower-stifado-greek"},"modified":"2026-02-22T22:57:59","modified_gmt":"2026-02-22T22:57:59","slug":"cauliflower-stifado-greek","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/greek\/blog\/2026\/02\/22\/cauliflower-stifado-greek\/","title":{"rendered":"Cauliflower Stifado (Greek)"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>1\/4 C.  best quality olive oil<br \/>\n1 C.  chopped onion<br \/>\n2-3 cloves garlic, finely chopped<br \/>\n1 Tbsp.  tomato paste<br \/>\n2 C.  water<br \/>\n1\/2 C.  red wine vinegar<br \/>\n1\/2 tsp. dried rosemary<br \/>\n1 bay leaf<br \/>\nsalt and freshly ground black pepper to taste<br \/>\n1 large cauliflower, washed an<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Heat the oil in a pot over moderate heat and cook the onion until lightly browned. Add the garlic and cook an additional 5 minutes. Add the tomato paste, water, vinegar, rosemary, bay leaves, salt, and pepper, and simmer covered over low heat for 30 minutes. Add the cauliflower and stir to coat with the sauce. Simmer covered until all the liquid has been absorbed and only the oil remains, about 30 to 40 minutes.
