5 Cups Mushrooms
1 1/2 Cups Vegetable Broth (or) Chicken Stock
1/2 Cup Chopped Onion
1/8 Teaspoon Dried Thyme
3 Tablespoons Butter
3 Tablespoons Rice Flour
1/4 Teaspoon Salt 1/4 Teaspoon Black Pepper 1 Cup Dairy Free Milk 1Tablespoon Sherry Wine

Cooking Instructions

1. In saucepan, cook muchrooms, broth and thyme until mushrooms are tender. 2. Blend mixtyure in blender, leaving some chumks of veggies in it. Set it to the side. 3. In saucepan, melt the butter, and whick the flour until smooth. Add salt and pepper, milk, and mushroom puree. Stirring consistently, bring to a boil and cook until thickened. Adjust seasoning to individual taste, and add sherry. Makes 5 servings.

First Group
1/2 c. finely chopped onion
1/2 c. finely chopped celery
1/2 c. finely chopped carrots
1 c. diced potatoes
1/2 c. margarine
1 c. chicken broth

Second Group
1 large loaf dried bread cut into cubes
1 tsp. salt
1/8 tsp. pepper
1 c. milk
1 c. chicken broth
2 c. finely chopped chicken, cooked

Cooking Instructions

Cook 1st group until vegetables are tender. . Add 2nd group to vegetable mixture and mix thoroughly. Add more broth if necessary. Bake 35-45 minutes at 350 degrees.

1/4 c. vegetable oil
1 egg
1/2 c. milk
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
2 c. blueberries, well drained
TOPPING:
1/4 c. butter
1/2 c. sugar
1/3 c. flour
1/2 tsp. cinnamon

Cooking Instructions

Combine with fork or pastry cutter. Crumble over cake batter. Cream together sugar, oil and egg until lemon colored. Stir in milk. Sift together flour, baking powder and salt and stir into creamed mixture. Gently fold in blueberries. Spread batter into greased and floured 9×9 square pan. Sprinkle with topping. Bake for 45-50 minutes at 375 degrees.

3/4 cup sugar
1 tsp. baking powder
3/4 tsp. salt
1 egg
1/2 cup cream
2 tsp. cinnamon

Cooking Instructions

Peel and slice apples, put in a 9×13 inch pan. Mix together all other ingredients and pour over apples.
On top of this pour cream and sprinkle with cinnamon. Bake at 350 degrees for 30 minutes or until apples are done.

5 C. diced wild turkey
2 C. wild rice
1 C. brown rice
7 C. chicken broth
1 pound sliced fresh mushrooms
4 tsp. chopped white onion
1 tsp. chopped fresh garlic
4 tsp. grated Parmesan cheese
1 pint cream
1 tsp. butter
2 C. celery
salt and pepper to taste

Cooking Instructions

Combine wild rice, brown rice and 5 cans chicken broth and cook until done. Mix rice, wild turkey and mushrooms in large bowl. Add cream, butter, celery, 2 more cans chicken broth, onion, garlic, salt and pepper. Pour mixture into baking dish and bake 1 hour at 350 degrees. Sprinkle grated Parmesan cheese on top and serve.

1 Tbsp. salt
2 Tbsp. poultry seasoning
1 (12 lb.) turkey
2 lg. onions, quartered
1/4 tsp. ground pepper
1 Tbsp. ground sage
2 stalks celery
OYSTER DRESSING:
1 loaf French bread, crumbled
2 Tbsp. poultry seasoning
1 tsp. salt
1/2 C. milk
1 C. turkey drippings
1 lg. onion, diced
1 Tbsp. ground sage
1/4 tsp. ground pepper
1 pt. oysters, chopped
1/2 stick butter or margarine

Cooking Instructions

Mix seasonings together and sprinkle in turkey cavity. Rub surface of turkey with seasonings. Cut celery into 2 inch pieces. Stuff turkey cavity with celery and onions. Secure opening with skewers. Place turkey in roaster and cover with foil, securing tightly. Do not cover roaster. Bake at 325 degrees for 3 1/2 to 4 hours or until brown and tender.
OYSTER DRESSING:
Combine bread crumbs, onion, and seasons; mix well. Add milk and oysters, blending well. Spread dressing in greased 9 inch square baking pan. Pour drippings over dressing and dot with butter. Bake at 400 degrees for 30 minutes. Serve dressing with turkey. 10 servings.

3 Tbsp. chopped onion
3 Tbsp. fat
6 Tbsp. flour
1 can cream of chicken soup
1 Tbsp. lemon juice
1/3 C. grated cheese
1/3 C. chopped green peppers
1 tsp. salt
1 1/2 C. milk
1 C. chopped turkey
1 pkg. canned biscuits or 1 recipe biscuits

Cooking Instructions

Brown onion and green pepper in melted fat; add salt and flour. Blend until moistened; add milk and soup. Cook until bubbly hot and thick, stirring occasionally. Add turkey and lemon juice. Pour into greased baking dish. Roll biscuits to form a rectangle 1/4 inch thick. Sprinkle grated cheese over dough and roll like jelly roll. Cut 1/2 inch thick; place on casserole. Bake in preheated 450 degree oven for 15 minutes. Reduce heat to 425 degrees and bake until swirls are browned. Yields 6 servings.

2 C. Water
1/4 C. Raisins
3/4 C. Wild Rice
1/2 Apple
2 slices Bacon
1/4 C. Onion
1 C. Wild Turkey Meat
1 stalk Celery
1 tsp. Chicken Base
1/2 Carrot
3 Tbsp. Soy Sauce
1/4 C. peas
1/4 C. chopped parsley
1/2 C. fresh mushrooms
1/4 C. Slivered Almonds
Pepper

Cooking Instructions

This is a great recipe for left over wild turkey, or you will have to cook and chop some wild turkey meat. Bring water to boil in medium saucepan, add wild rice, reduce heat and simmer until rice is fluffy (about 20 minutes). Stir occasionally and make sure rice doesn’t cook dry. Drain if necessary and set aside. Cook bacon in large deep skillet until brown. Dry bacon, chop and return to skillet, retaining bacon drippings in skillet. Add the chopped onion, diced celery, chopped carrot, peas, sliced mushrooms, almonds, raisins and cored and cubed apple to the skillet and cook slowly over medium heat until tender. Stir continuously. Next add cooked wild turkey breast meat that has been chopped, chicken base, soy sauce, parsley and pepper to taste. Fold in wild rice and serve hot.

1 C. raw wild rice 3 C. chicken broth
1 C. diced celery 1/4 C. minced onion
1/2 C. melted butter 4 oz. can mushrooms
1/2 tsp. salt 1/2 tsp. pepper
1/4 tsp. sage 1/4 tsp. thyme

Cooking Instructions

Cook rice in boiling broth. Saute celery, onions and mushrooms in butter for 2-3 minutes. Combine all ingredients. Makes about 6 C. or enough to stuff a 10 pound turkey. Also great with any wild game.

1 can chicken broth or water (10 3/4 oz.)
1 sm. onion
Salt, pepper and other seasonings of your choice

Cooking Instructions

Mix all ingredients and add the onion and seasoning. Bake in a greased casserole at 350 degrees for about 1 hour.
