{"id":6018,"date":"2026-02-15T18:47:51","date_gmt":"2026-02-15T18:47:51","guid":{"rendered":"https:\/\/recipe4thecook.com\/\/"},"modified":"2026-02-15T18:47:51","modified_gmt":"2026-02-15T18:47:51","slug":"tomatoes-stuffed-with-corn-slaw","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/diabetic\/blog\/2026\/02\/15\/tomatoes-stuffed-with-corn-slaw\/","title":{"rendered":"Tomatoes Stuffed With Corn Slaw"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>8 large tomatoes<br \/>\n1\/4 C. cider vinegar<br \/>\n2 Tbsp. balsamic vinegar<br \/>\n2 Tbsp. sugar<br \/>\n3 Tbsp. tofu mayonnaise<br \/>\n1\/2 tsp. celery seeds<br \/>\n1\/2 tsp. dry mustard<br \/>\n1\/4 tsp. white pepper<br \/>\n4 C. green cabbage, shredded<br \/>\n1 tart green apple, minced<br \/>\n1 C. corn kernels<br \/>\n1 large green bell pepper, minced<br \/>\n1\/4 C. red onion, minced<br \/>\nsalt, to taste<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Slice tops of tomatoes and scoop out the insides; reserve for another use. Set tomatoes on  a platter. In a large bowl, toss together remaining ingredients. Spoon into tomatoes. Serve  or wrap and store in refrigerator overnight to allow the flavors to develop.
