{"id":5798,"date":"2026-02-15T18:47:35","date_gmt":"2026-02-15T18:47:35","guid":{"rendered":"https:\/\/recipe4thecook.com\/\/"},"modified":"2026-02-15T18:47:35","modified_gmt":"2026-02-15T18:47:35","slug":"spiced-rice-pilaf","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/diabetic\/blog\/2026\/02\/15\/spiced-rice-pilaf\/","title":{"rendered":"Spiced Rice Pilaf"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>1 C. brown basmati rice<br \/>\n1 Tbsp. vegetable oil<br \/>\n1 small onion, chopped<br \/>\n1 clove garlic, minced<br \/>\n4 whole cloves<br \/>\n1\/8 tsp. salt<br \/>\n2 C. chicken broth<br \/>\n1 cinnamon stick<br \/>\n1 tsp. vegetable oil<br \/>\n1 Tbsp. raisins<br \/>\n1 Tbsp. almonds, blanched slivered, or 1 Tbsp. pine nuts<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Soak rice 2 hours to shorten cooking time; rinse and drain. In a large nonstick saucepan,  heat 1 Tbls. oil. Saute onion and garlic until tender, 2 to 3 minutes. Add cloves;  cook 1 minute. Add rice; stir to coat. Add salt, broth. and cinnamon stick. Bring to a boil.  Cover; reduce heat. Simmer 20 to 25 minutes, until liquid is absorbed. Discard cinnamon  stick. Heat 1 tsp. oil. Add raisins and almonds; warm.
