{"id":5491,"date":"2026-02-15T18:47:30","date_gmt":"2026-02-15T18:47:30","guid":{"rendered":"https:\/\/recipe4thecook.com\/\/"},"modified":"2026-02-15T18:47:30","modified_gmt":"2026-02-15T18:47:30","slug":"pepper-chicken-baked-potatoes","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/diabetic\/blog\/2026\/02\/15\/pepper-chicken-baked-potatoes\/","title":{"rendered":"Pepper Chicken Baked Potatoes"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>4 baking potatoes, scrubbed<br \/>\n2 tsp. unsalted butter<br \/>\n3\/4 pound boneless skinless chicken breast halves, cut into 1-inch pieces<br \/>\n1 large green or red bell pepper, seeded and cut into strips<br \/>\n1 small onion, cut into thin wedges<br \/>\n1 tsp. dried basil leaves, crushed<br \/>\n1 can cream of chicken soup<br \/>\n1\/4 C. water<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Preheat oven to 400 degrees F. Place potatoes in oven and bake 1 hour, or until tender.  Melt butter in a heavy nonstick skillet over medium high heat. Saute chicken, in batches  if necessary, until browned, stirring often. Transfer chicken to platter and set aside. Add  pepper, onion and basil to same skillet. Saute 3 to 4 minutes, stirring often, until  vegetables are almost tender. Stir in soup and water. Bring to a boil. Return chicken to  skillet. Reduce heat to low. Cover pan and simmer 5 minutes, stirring occasionally, or  until chicken is cooked throughout.
