{"id":5342,"date":"2026-02-15T18:47:19","date_gmt":"2026-02-15T18:47:19","guid":{"rendered":"https:\/\/recipe4thecook.com\/\/"},"modified":"2026-02-15T18:47:19","modified_gmt":"2026-02-15T18:47:19","slug":"mushroom-vegetable-soup","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/diabetic\/blog\/2026\/02\/15\/mushroom-vegetable-soup\/","title":{"rendered":"Mushroom Vegetable Soup"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>1 pound mushrooms, fresh<br \/>\n2 Tbsp. margarine, divided<br \/>\n1 C. carrot, finely chopped<br \/>\n1 C. celery, finely chopped<br \/>\n1 C. onion, finely chopped<br \/>\n1 garlic clove, minced<br \/>\n13-3\/4 oz. condensed beef broth<br \/>\n2 C. water<br \/>\n1\/4 C. tomato paste<br \/>\n2 tsp. parsley flakes, or 1\/4 C. fresh parsley, minced<br \/>\n1 bay leaf<br \/>\n1\/2 tsp. ground pepper, freshly<br \/>\n2 Tbsp. dry sherry<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Wash mushrooms, slice half of them and set aside. Chop remaining mushrooms and Saute  in 1 Tbls. margarine in a large pot. Add all vegetables, except sliced mushrooms,  and cook 6 to 7 minutes, stirring often. Stir in all other ingredients, except mushrooms,  remaining margarine, and sherry. Simmer, covered, for 1 hour. Puree soup in a blender or  food processor fitted with steel blade. Saute sliced mushrooms in remaining 1 Tbls.  of margarine. Return pureed soup to pot, sauteed mushrooms and sherry.
