{"id":4656,"date":"2026-02-15T18:47:00","date_gmt":"2026-02-15T18:47:00","guid":{"rendered":"https:\/\/recipe4thecook.com\/\/"},"modified":"2026-02-15T18:47:00","modified_gmt":"2026-02-15T18:47:00","slug":"corn-souffle","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/diabetic\/blog\/2026\/02\/15\/corn-souffle\/","title":{"rendered":"Corn Souffle"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>2 tsp. margarine<br \/>\n2 Tbsp. flour<br \/>\n1 C. skim milk, or 1 percent milk<br \/>\nsalt and pepper, to taste<br \/>\n1\/4 tsp. garlic powder<br \/>\n3 eggs, separated<br \/>\n2 C. canned corn, drained<br \/>\nnonstick vegetable cooking spray<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Melt margarine in medium saucepan over low heat. Add flour and stir until smooth. Cook 1 minute, stirring constantly. Gradually add milk. Cook over medium heat, stirring constantly, until thick and bubbly. Stir in salt, pepper, and garlic powder. Beat egg yolks until thick. Gradually stir about 1\/4 of white sauce into yolks. Add remaining sauce and stir in corn. Beat egg whites until stiff. Gently fold into corn mixture. Spoon mixture into a small 1-1\/2 quart souffla dish that has been coated with vegetable spray. Bake at 350 degrees F. for 50 minutes, or until puffed and golden.
