{"id":4644,"date":"2026-02-15T18:47:00","date_gmt":"2026-02-15T18:47:00","guid":{"rendered":"https:\/\/recipe4thecook.com\/\/"},"modified":"2026-02-15T18:47:00","modified_gmt":"2026-02-15T18:47:00","slug":"cold-turkey-reuben-sandwich","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/diabetic\/blog\/2026\/02\/15\/cold-turkey-reuben-sandwich\/","title":{"rendered":"Cold Turkey Reuben Sandwich"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>4 tsp. plain yogurt, low fat<br \/>\n8 slices rye bread<br \/>\n8 oz. turkey breast, thinly sliced, cooked<br \/>\n1-1\/3 C. sweet and sour red cabbage, drained<br \/>\nSweet and Sour Cabbage:<br \/>\n1 lb. red cabbage, shredded<br \/>\n1\/2 C. cider vinegar<br \/>\n1\/2 C. water<br \/>\n2 Tbsp. margarine<br \/>\n1\/2 tsp. salt<br \/>\nsugar equivalent to a 2 Tbsp. sugar<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Sandwich: Spread 1 tsp. yogurt on each 4 slices of rye bread. Divide the sliced turkey among tops of the bread slices. Spoon 1\/3 Sweet and Sour Red Cabbage on each sandwich. Top with remaining bread. Sweet and Sour Red Cabbage: Put cabbage, vinegar, water, margarine, and salt in a deep cooking pot. Cover and cook about 15 minutes, or until crisp and tender, lifting and turning with a large kitchen fork two or three times. Remove from heat. Add sweetener to cabbage gradually, lifting and mixing well with a fork.
