{"id":4628,"date":"2026-02-15T18:47:00","date_gmt":"2026-02-15T18:47:00","guid":{"rendered":"https:\/\/recipe4thecook.com\/\/"},"modified":"2026-02-15T18:47:00","modified_gmt":"2026-02-15T18:47:00","slug":"clam-chowder-2","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/diabetic\/blog\/2026\/02\/15\/clam-chowder-2\/","title":{"rendered":"Clam Chowder"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>1\/2 C. mushrooms, chopped<br \/>\n1 C. celery, chopped<br \/>\n1 C. onion, chopped<br \/>\n1\/4 C. margarine<br \/>\n1 quart water, boiling<br \/>\n1 C. carrots, diced finely<br \/>\n1 C. potatoes, diced<br \/>\n2 cans clams (6-1\/2 oz. each), with juice, chopped<br \/>\n1 Tbsp. pimientos, chopped<br \/>\n1\/4 C. dry white wine<br \/>\nWhite Sauce:<br \/>\n1\/4 C. margarine<br \/>\n1\/4 C. flour<br \/>\n1 gallon skim milk<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Saute the mushrooms, celery, and onion in 1\/4 C. margarine in a heavy saucepan. Add the water, carrots, and potatoes. Simmer for 20 minutes, or until the vegetables are tender. While vegetables are simmering, make a roux by melting 1\/4 C. margarine in a saucepan over medium heat. Stir in flour and mix well. Add the skim milk, stirring occasionally, until thickened. Set aside. When vegetables are tender, add clams with juices, pimentos, and white wine. Add white sauce. Cook 10 minutes longer.
