{"id":4476,"date":"2026-02-15T18:46:49","date_gmt":"2026-02-15T18:46:49","guid":{"rendered":"https:\/\/recipe4thecook.com\/\/"},"modified":"2026-02-15T18:46:49","modified_gmt":"2026-02-15T18:46:49","slug":"cherry-cola-salad","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/diabetic\/blog\/2026\/02\/15\/cherry-cola-salad\/","title":{"rendered":"Cherry Cola Salad"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>6 oz. canned unsweetened red cherries, tart, pitted, drained, reserve juice<br \/>\n5 packages Equal sugar substitute<br \/>\n2 packages (0.35 oz. each) sugar free cherry gelatin<br \/>\n20 oz. canned unsweetened crushed pineapple, drained, reserve juice<br \/>\n1 C. diet cola, very cold<br \/>\n2 Tbsp. pecans, finely chopped (optional)<br \/>\n1\/4 C. finely chopped celery<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Place cherries in small bowl; sprinkle with Equal. In saucepan, dissolve gelatin in 2 cup boiling water. Remove from heat, and transfer gelatin to large mixing bowl. Allow to cool for 30 minutes to 1 hour until it begins to congeal. Combine reserved cherry and pineapple juices in a 1-cup measure. Add enough water to make 1 cup. Add juice to gelatin. Stir in diet cola, pineapple, pecans, celery and gelatin. Pour into a 9 by 13 glass pan. Refrigerate until firm.
