{"id":4260,"date":"2026-02-15T18:46:47","date_gmt":"2026-02-15T18:46:47","guid":{"rendered":"https:\/\/recipe4thecook.com\/\/"},"modified":"2026-02-15T18:46:47","modified_gmt":"2026-02-15T18:46:47","slug":"banana-health-loaf","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/diabetic\/blog\/2026\/02\/15\/banana-health-loaf\/","title":{"rendered":"Banana Health Loaf"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>1-1\/2 C. whole wheat flour, divided<br \/>\n1\/2 tsp. salt<br \/>\n1\/2 C. coconut, unsweetened, shredded<br \/>\n2 tsp. baking powder<br \/>\n1\/2 tsp. baking soda<br \/>\n1 C. mashed banana (3 small)<br \/>\n3 Tbsp. vegetable oil<br \/>\n2 Tbsp. liquid honey<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Mix together 1-1\/4 cup of flour, salt, coconut, baking powder, and baking soda in a  bowl. Combine banana, oil and honey. Stir into flour mixture quickly but gently until just  combined. Add part of the remaining 1\/4 cup flour, if needed. Batter will be lumpy.  Spread batter evenly in a lightly greased, or waxed paper lined, 8 by 4 loaf pan. Bake at  350 degrees F. about 45 minutes until tester inserted in center comes out clean, or bake  about 35 minutes in a 9 by 5 loaf pan or muffin cup if 8 by 4 pan is not available. When  done, cool 10 minutes in pan. Turn out of pan and cool completely on rack.
