{"id":4210,"date":"2026-02-15T18:46:47","date_gmt":"2026-02-15T18:46:47","guid":{"rendered":"https:\/\/recipe4thecook.com\/\/"},"modified":"2026-02-15T18:46:47","modified_gmt":"2026-02-15T18:46:47","slug":"asparagus-with-toasted-pine-nuts-and-lemon-vinai","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/diabetic\/blog\/2026\/02\/15\/asparagus-with-toasted-pine-nuts-and-lemon-vinai\/","title":{"rendered":"Asparagus With Toasted Pine Nuts And Lemon Vinai"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>1 pound asparagus, fresh spears<br \/>\n3 Tbsp. pine nuts<br \/>\n1\/4 C. olive oil<br \/>\n1 Tbsp. lemon juice, fresh<br \/>\n1 clove garlic, crushed<br \/>\n1\/2 tsp. salt<br \/>\n1\/2 tsp. basil, dried whole<br \/>\n1\/2 tsp. oregano, dried whole<br \/>\npepper, freshly ground<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Snap off tough ends of asparagus. Remove scales from stalks with knife or vegetable  peeler, if desired. Place spears in a steaming rack over boiling water; cover and steam 4  to 5 minutes, or until spears are crisp and tender. Transfer to a serving platter. Saute pine  nuts in a small skillet over medium heat 2 to 3 minutes, until browned. Set aside.  Combine olive oil and remaining ingredients in a medium saucepan; stir with a wire  whisk to blend. Cook over medium heat 2 to 3 minutes or until thoroughly heated,  stirring constantly. Pour over asparagus. Sprinkle with pine nuts.
