{"id":3679,"date":"2026-02-15T18:44:41","date_gmt":"2026-02-15T18:44:41","guid":{"rendered":"https:\/\/recipe4thecook.com\/\/"},"modified":"2026-02-15T18:44:41","modified_gmt":"2026-02-15T18:44:41","slug":"meatball-soup","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/crockpot\/blog\/2026\/02\/15\/meatball-soup\/","title":{"rendered":"Meatball Soup"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>1\/3 C. lentils<br \/>\n1 medium onion chopped<br \/>\n2 small carrots chopped<br \/>\n1 celery stalk chopped<br \/>\n2 1\/2 Tbsp. oil<br \/>\n1\/2 pound tomatoes<br \/>\n1 tsp. grated fresh ginger<br \/>\n1 tsp. salt<br \/>\n1\/2 tsp. cumin<br \/>\n1\/4 tsp. freshly ground black pepper<br \/>\n6 C. beef stock<br \/>\n1 pound ground lamb<br \/>\n1\/3 C. chicken stock<br \/>\n4 Tbsp. plain flour<br \/>\n1 tsp. salt<br \/>\n1 garlic clove minced<br \/>\n1 1\/2 Tbsp. chopped fresh parsley<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Put lentils in a saucepan with enough water to cover. Bring to a boil and boil for three minutes. Remove from heat and allow to stand for one hour. Return to the heat and simmer for one hour. Add a little more water if necessary. Drain. Saute the onion, carrots and celery in the oil until the onion is transparent. Put into the crockery pot. Add the lentils, tomatoes, ginger, salt, cumin, pepper and beef stock. Cover and cook on the low setting for four hours. Mix together the ground lamb, chicken stock, flour, salt, garlic and parsley. Form into small balls and drop into the soup.
