{"id":3325,"date":"2026-02-15T18:44:28","date_gmt":"2026-02-15T18:44:28","guid":{"rendered":"https:\/\/recipe4thecook.com\/\/"},"modified":"2026-02-15T18:44:28","modified_gmt":"2026-02-15T18:44:28","slug":"chicken-with-lemon-and-herbs","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/crockpot\/blog\/2026\/02\/15\/chicken-with-lemon-and-herbs\/","title":{"rendered":"Chicken With Lemon And Herbs"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>3 pounds chicken to 3 1\/2 pounds quartered<br \/>\n3 large garlic cloves sliced<br \/>\n1 1\/2 C. fresh lemon juice about 8 large lemons<br \/>\n1\/4 C. all purpose flour<br \/>\n1\/2 Tbsp. hot paprika<br \/>\n1 Tbsp. olive oil<br \/>\n1 C. long-grain white rice<br \/>\n1 medium yellow onion thinly sliced 1 1\/2 C.<br \/>\nSalt optional<br \/>\nFreshly ground pepper to taste<br \/>\n1 C. mixed chopped fresh herbs such as dill, mint, and flat leaf parsley<br \/>\n1 3\/4 C. chicken stock or canned broth<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Rinse chicken and pat dry. Discard giblets and neck or reserve for another use. Put chicken pieces and garlic in a shallow glass dish and pour lemon juice over. Cover with plastic wrap and refrigerate overnight or at least 6 hours. Turn occasionally. When ready to cook, drain chicken, reserving lemon juice and garlic. In a large self sealing plastic bag, shake flour and paprika to combine. Add chicken in pieces and shake to coat. In a large nonstick skillet, brown chicken pieces in oil over medium-high heat until golden, about 5 minutes per side. Remove chicken and keep warm. Put rice in a 5 quart or larger crock pot and top with onion and chicken. In a small saucepan, whisk together reserved lemon juice, garlic, herbs, salt, pepper, and stock. Bring to a full boil and boil 1 minute. Pour over chicken. Do not stir.
