{"id":38,"date":"2026-02-22T20:12:35","date_gmt":"2026-02-22T20:12:35","guid":{"rendered":"https:\/\/recipes4thecook.com\/chunky-vegetarian-chili"},"modified":"2026-02-22T20:12:35","modified_gmt":"2026-02-22T20:12:35","slug":"chunky-vegetarian-chili","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/chili\/blog\/2026\/02\/22\/chunky-vegetarian-chili\/","title":{"rendered":"Chunky Vegetarian Chili"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>1 medium green pepper, chopped<br \/>\n1 medium onion, chopped<br \/>\n3 cloves garlic, minced<br \/>\n1 Tbsp. cooking oil<br \/>\n2 cans Mexican stewed tomatoes, undrained (14-1\/2 oz. each)<br \/>\n16 oz. canned kidney beans, rinsed and drained<br \/>\n15 oz. canned pinto beans, rinsed and drained<br \/>\n11 oz. canned whole kernel corn, drained<br \/>\n2-1\/2 C. water<br \/>\n1 C. uncooked long grained rice<br \/>\n1 to 2 Tbsp. chili powder<br \/>\n1-1\/2 tsp. ground cumin<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>In a Dutch oven,  saute green pepper, onion and garlic in oil until tender. Stir in all remaining ingredients, and bring to a boil. Reduce heat. Cover and simmer for 25 to 30 minutes, or until rice is cooked, stirring occasionally.
