{"id":59776,"date":"2026-02-22T22:24:19","date_gmt":"2026-02-22T22:24:19","guid":{"rendered":"https:\/\/recipes4thecook.com\/caribbean-banana-dessert"},"modified":"2026-02-22T22:24:19","modified_gmt":"2026-02-22T22:24:19","slug":"caribbean-banana-dessert","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/caribbean\/blog\/2026\/02\/22\/caribbean-banana-dessert\/","title":{"rendered":"Caribbean Banana Dessert"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>1 Tbsp. lemon peel<br \/>\n1 Tbsp. orange peel<br \/>\n1 Tbsp. lemon juice<br \/>\n3 Tbsp. orange juice<br \/>\n3 C. banana chunks<br \/>\n3 tsp. egg substitute mixed with<br \/>\n4 Tbsp. water<br \/>\n1\/3 C. brown sugar<br \/>\n3 Tbsp. pineapple juice<br \/>\n1 C. soy milk<br \/>\n1 C. breadcrumbs<br \/>\n2 Tbsp. soy margarine, melted and cooled<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Preheat oven to 300 degrees. Oil a 1 1\/2 quart mold. Combine peels and juices with  banana and set aside.  Place egg substitute, sugar and pineapple juice in a food processor and pulse till blended.  Add soy milk and bread crumbs and pulse a few more times. Spoon mixture over banana  mixture. Add margarine, mix well and pour into prepared mold.  Place mold in a large pan and pour in enough boiling water to reach halfway up the sides  of the mold. Bake 1 hour 20 minutes, a knife inserted should come out clean. You may  have to add more boiling water during the cooking time. Cool 20 to 30 minutes and then  remove from the mold.
