{"id":59781,"date":"2026-02-22T22:22:15","date_gmt":"2026-02-22T22:22:15","guid":{"rendered":"https:\/\/recipes4thecook.com\/canadian-bacon-and-eggplant-roll-ups"},"modified":"2026-03-29T09:26:35","modified_gmt":"2026-03-29T13:26:35","slug":"canadian-bacon-and-eggplant-roll-ups","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/canadian\/blog\/2026\/02\/22\/canadian-bacon-and-eggplant-roll-ups\/","title":{"rendered":"Canadian Bacon and Eggplant Roll-Ups"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>10       slices  Canadian bacon, about 1\/8-inch thick (about 10 oz.)<br \/>\n1        large  eggplant, about 1 1\/2 pounds<br \/>\n3        tablespoons  vegetable oil<br \/>\n2        tablespoons  flour<br \/>\n1 1\/2    cups  milk<br \/>\nDash     ground pepper<br \/>\nDash     nutmeg<br \/>\n1        cup  part<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Wash eggplant; pare if desired; cut off stem and blossom end. Cut lengthwise into 10 thin slices. Brush slices lightly with oil and saute a few at a time in a 10-inch fry pan until tender. Set aside.<\/p>\n<p>Measure 1 tablespoon of oil into fry pan; stir in flour, add milk; cook and stir until mixture boils and thickens. Season with pepper and nutmeg. Combine Ricotta cheese and parsley. Lay one slice of bacon on each eggplant slice. Lap one small eggplant slice over a larger slice.<\/p>\n<p>Spoon a rounded tablespoon of cheese over eggplant and bacon. Roll around cheese and place seam-side-down in an 11 by 7-inch baking dish. Pour sauce over eggplant roll-ups. Sprinkle with cheese.
