{"id":2842,"date":"2026-02-15T18:42:13","date_gmt":"2026-02-15T18:42:13","guid":{"rendered":"https:\/\/recipe4thecook.com\/\/"},"modified":"2026-02-15T18:42:13","modified_gmt":"2026-02-15T18:42:13","slug":"toffee-cream-cake","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/cake\/blog\/2026\/02\/15\/toffee-cream-cake\/","title":{"rendered":"Toffee Cream Cake"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>Base<br \/>\n1 tsp. butter<br \/>\n2 tsp. flour<br \/>\n4 egg whites<br \/>\n6 ounces caster sugar<br \/>\n6 ounces ground almonds<br \/>\nToffee cream<br \/>\n7 fluid ounces cream<br \/>\n3 ounces caster sugar<br \/>\n2 ounces golden syrup<br \/>\n2 tsp. butter<br \/>\n1 tsp. vanilla sugar<br \/>\nGarnish<br \/>\n8 ounces cream<br \/>\n1\/2 to 1 Tbsp. cocoa powder<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Preheat the oven to 325. Using a plate as a template, draw a circle on greaseproof paper.  Grease the circle with the butter, sprinkle over the flour and place the paper on a baking  sheet. Beat the egg whites until they form stiff peaks. Add the sugar, a little at a time,  beating constantly. Fold in the almonds. Spread the mixture on the circle of greaseproof  paper. Bake for 20-25 minutes. Set aside to cool. Mix the sugar, syrup and cream in a  heavy-based saucepan. Simmer over low heat, stirring constantly, until the cream has  thickened. Remove from the heat and beat in the butter. Allow the sauce to cool almost  completely and add the vanilla sugar. Spread the sauce over the top of the cake. Beat the  cream until s tiff and spread over the top of the toffee cream. Sprinkle over the cocoa  powder.
