{"id":2793,"date":"2026-02-15T18:42:12","date_gmt":"2026-02-15T18:42:12","guid":{"rendered":"https:\/\/recipe4thecook.com\/\/"},"modified":"2026-02-15T18:42:12","modified_gmt":"2026-02-15T18:42:12","slug":"surprise-carrot-cake","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/cake\/blog\/2026\/02\/15\/surprise-carrot-cake\/","title":{"rendered":"Surprise Carrot Cake"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>8 ounces cream cheese; softened<br \/>\n1\/4 C. sugar<br \/>\n1 egg; beaten<br \/>\n2 C. flour<br \/>\n1 3\/4 C. sugar<br \/>\n2 tsp. baking soda<br \/>\n2 tsp. cinnamon<br \/>\n1 tsp. salt<br \/>\n1 C. oil<br \/>\n3 eggs; beaten<br \/>\n3 C. carrots; shredded<br \/>\n1\/2 C. nuts; chopped<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Combine cream cheese sugar and egg, mixing until well blended. Set aside. Combine dry  ingredients. Add combined oil and eggs, mixing just until moistened. Fold in carrots and  nuts. Reserve 2 C. batter. Pour remaining batter into a greased and floured 9-inch  Bundt pan. Pour cream cheese mixture over batter; carefully spoon reserved batter over  cream cheese mixture, spreading to cover. Bake at 350 for 55 minutes or until wooden  pick inserted in center comes out clean. Cool 10 minutes; remove from pan. Cool  thoroughly.
