{"id":2250,"date":"2026-02-15T18:41:55","date_gmt":"2026-02-15T18:41:55","guid":{"rendered":"https:\/\/recipe4thecook.com\/\/"},"modified":"2026-02-15T18:41:55","modified_gmt":"2026-02-15T18:41:55","slug":"lemon-wonder-cake","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/cake\/blog\/2026\/02\/15\/lemon-wonder-cake\/","title":{"rendered":"Lemon Wonder Cake"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>2 1\/4 C. all-purpose flour<br \/>\n2 tsp. baking powder<br \/>\n1\/2 tsp. baking soda<br \/>\n1 lemon<br \/>\n1 C. dates<br \/>\n1\/2 C. butter<br \/>\n1\/2 C. granulated sugar<br \/>\n1\/2 C. brown sugar, packed<br \/>\n2 eggs; slightly beaten<br \/>\n1 C. buttermilk or sour milk<br \/>\nFavorite Caramel Frosting:<br \/>\n3 C. sugar; divided<br \/>\n3\/4 C. milk<br \/>\n1 egg; beaten<br \/>\nPinch salt<br \/>\n1\/2 C. butter or margarine; cut up<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Cream together the butter and both sugars; add eggs and beat for one minute. Add  buttermilk alternately with the flour mixture to the egg mixture. Pour batter into two well  greased and lightly floured 8 inch round pans. Bake in preheated 350 oven for 30-35  minutes. Frost with favorite caramel frosting.  Favorite Caramel Frosting:  Sprinkle 1\/2 C. sugar in a heavy saucepan; place over medium heat. Cook, stirring  constantly, until sugar melts and syrup is light golden brown. Combine remaining 2-1\/2  C. sugar, milk, beaten egg, and salt, stirring well; stir in butter. Stir butter mixture into  hot caramelized sugar. Cook over medium heat, stirring frequently, until a candy  thermometer registers 230 degrees. Cool 5 minutes.
