{"id":2157,"date":"2026-02-15T18:41:45","date_gmt":"2026-02-15T18:41:45","guid":{"rendered":"https:\/\/recipe4thecook.com\/\/"},"modified":"2026-02-15T18:41:45","modified_gmt":"2026-02-15T18:41:45","slug":"italian-cream-cake-and-cream-cheese-icing","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/cake\/blog\/2026\/02\/15\/italian-cream-cake-and-cream-cheese-icing\/","title":{"rendered":"Italian Cream Cake And Cream Cheese Icing"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>1 stick butter, softened<br \/>\n1\/2 C. shortening<br \/>\n2 C. sugar<br \/>\n5 eggs, separated<br \/>\n2 C. flour<br \/>\n1 tsp. baking soda<br \/>\n1 C. buttermilk<br \/>\n1 tsp. vanilla<br \/>\n1 can (3 1\/2 ounces) flaked coconut<br \/>\n1 C. chopped nuts<br \/>\nIcing<br \/>\n8 ounces cream cheese, softened<br \/>\n1\/2 stick butter, softened<br \/>\n1 box powdered sugar, sifted<br \/>\n1 tsp. vanilla<br \/>\nChopped pecans<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Cream butter and shortening. Add sugar; beat until mixture is smooth. Add egg yolks and  beat. Combine flour and soda; add to creamed mixture, alternately with buttermilk. Stir in  vanilla, coconut and nuts. Fold in stiffly beaten egg whites. Pour batter into well greased  9&#215;13 inch sheet pan. Bake at 350 for 40-45 minutes. Beat cream cheese until smooth. In  separate bowl, combine sugar and butter; mix well. Add to cream cheese. Stir in vanilla  and beat until smooth. Frost cool cake in pan. Top with chopped pecans.
