{"id":1924,"date":"2026-02-15T18:41:42","date_gmt":"2026-02-15T18:41:42","guid":{"rendered":"https:\/\/recipe4thecook.com\/\/"},"modified":"2026-02-15T18:41:42","modified_gmt":"2026-02-15T18:41:42","slug":"emerald-island-cake","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/cake\/blog\/2026\/02\/15\/emerald-island-cake\/","title":{"rendered":"Emerald Island Cake"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>1\/2 C. butter or margarine<br \/>\n1 C. sugar<br \/>\n2 eggs<br \/>\n1 tsp. vanilla extract<br \/>\n1 3\/4 C. all purpose flour<br \/>\n2 tsp. baking powder<br \/>\n1\/2 tsp. salt<br \/>\n1\/2 C. milk<br \/>\nGlaze<br \/>\n1 C. confectioner&#8217;s sugar<br \/>\n1 Tbsp.<br \/>\n2 Tbsp. milk<br \/>\nGreen food coloring, optional<br \/>\nslivered almonds, optional.<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>In mixing bowl, cream butter  plus sugar. Add eggs, one at a time, beating well after each addition. Blend in vanilla.  Combine baking powder plus salt; add alternately with milk. Beat until smooth. Spread  into greased 9&#215;9-inch square pan. Bake at 350 for 40 minutes or until cake test done.  Glaze: combine confectioner&#8217;s sugar plus milk or whiskey, stirring until smooth plus  fairly thin. If desired, add 1 to 2 drops of food coloring plus stir until well blended.  Spread glaze over warm cake.
