{"id":1910,"date":"2026-02-15T18:41:42","date_gmt":"2026-02-15T18:41:42","guid":{"rendered":"https:\/\/recipe4thecook.com\/\/"},"modified":"2026-02-15T18:41:42","modified_gmt":"2026-02-15T18:41:42","slug":"east-texas-pecan-cake","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/cake\/blog\/2026\/02\/15\/east-texas-pecan-cake\/","title":{"rendered":"East Texas Pecan Cake"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>2 C. butter<br \/>\n4 1\/2 C. flour; sifted<br \/>\n1\/8 tsp. salt<br \/>\n1 tsp. baking powder<br \/>\n6 eggs<br \/>\n1 pound brown sugar<br \/>\n1\/2 C. milk<br \/>\n1 tsp. vanilla<br \/>\n3 Tbsp. instant coffee<br \/>\n4 C. chopped pecans<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Set out butter to soften. Sift together flour, salt, and baking powder. Grease bottom of 10-  inch tube pan. Separate eggs; beat yolks well; beat egg whites until stiff. In a large  mixing bowl, cream together butter and brown sugar. Add beaten egg yolks, mixing well.  Combine milk, vanilla and coffee dissolved in 3 Tbls. hot water. Add alternately  with dry ingredients. Fold in pecans and egg whites. Pour into pan and bake at 325  degrees 1-1\/2 hours. Let cool in pan on cake rack.
