{"id":1817,"date":"2026-02-15T18:41:41","date_gmt":"2026-02-15T18:41:41","guid":{"rendered":"https:\/\/recipe4thecook.com\/\/"},"modified":"2026-02-15T18:41:41","modified_gmt":"2026-02-15T18:41:41","slug":"costa-rican-raisin-cake","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/cake\/blog\/2026\/02\/15\/costa-rican-raisin-cake\/","title":{"rendered":"Costa Rican Raisin Cake"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>1 Tbsp. cornstarch<br \/>\n1\/2 C. freshly brewed Cafe Cartago<br \/>\n3\/4 C. sugar, divided<br \/>\n1 C. seedless raisins<br \/>\n1\/2 C. chopped nuts<br \/>\n1\/2 C. butter<br \/>\n1\/2 C. dark brown sugar<br \/>\n2 eggs, beaten<br \/>\n2 C. flour<br \/>\n1-1\/2 tsp. cream of tartar<br \/>\n1-1\/2 tsp. baking soda<br \/>\n1\/2 C. milk<br \/>\n1 tsp. vanilla extract<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Mix cornstarch and coffee in saucepan until smooth. Add 1\/2 C. sugar and cook over  low heat, stirring constantly until thickened. Add raisins and nuts and set aside while  preparing batter. Beat butter until soft and fluffy. Add brown sugar and remaining white  sugar and continue beating until thick and light in color. Add cream of tartar and baking  soda together and add alternately with milk. Add vanilla and mix well. Pour 1\/2 the batter  into a buttered 8-inch square pan. Spread with raisin mixture and cover with remaining  batter. Bake in preheated 350 degree oven for 40 minutes or until knife comes out clean.
