{"id":1531,"date":"2026-02-15T18:41:29","date_gmt":"2026-02-15T18:41:29","guid":{"rendered":"https:\/\/recipe4thecook.com\/\/"},"modified":"2026-02-15T18:41:29","modified_gmt":"2026-02-15T18:41:29","slug":"blueberry-oat-meal-cake","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/cake\/blog\/2026\/02\/15\/blueberry-oat-meal-cake\/","title":{"rendered":"Blueberry Oat Meal Cake"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>1 C. blueberries<br \/>\n1\/4 C. sugar<br \/>\n1\/3 C. corn syrup<br \/>\n2 egg whites or substitute<br \/>\n3\/4 C. flour, all-purpose<br \/>\n2 Tbsp. cornstarch<br \/>\n1 tsp. baking soda<br \/>\n1\/3 C. oatmeal uncooked<br \/>\n1\/2 tsp. lemon rind grated<br \/>\n1\/4 tsp. nutmeg<br \/>\n1\/8 tsp. cardamom<br \/>\n1\/2 C. nonfat mayonnaise<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Spray bottom and sides of 9 inch layer cake pan. Line bottom with wax paper. In small  bowl, combine blueberries and 2 Tbls. of sugar. Spoon into pan. In large bowl, mix  corn syrup and remaining sugar. Add egg whites or egg substitute; beat until light and  fluffy. Combine dry ingredients and lemon rind. Stir into egg mixture, alternating with  mayonnaise. Carefully spoon over berries in pan. Bake in a 350 degree oven for 30 &#8211; 45  minutes or until top springs back when touched. Remove from oven; let stand 5 minute.  Loosen sides with metal spatula.
