{"id":1521,"date":"2026-02-15T18:41:28","date_gmt":"2026-02-15T18:41:28","guid":{"rendered":"https:\/\/recipe4thecook.com\/\/"},"modified":"2026-02-15T18:41:28","modified_gmt":"2026-02-15T18:41:28","slug":"blue-ribbon-banana-cake-with-creamy-nut-filling","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/cake\/blog\/2026\/02\/15\/blue-ribbon-banana-cake-with-creamy-nut-filling\/","title":{"rendered":"Blue Ribbon Banana Cake With Creamy Nut Filling"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>3\/4 C. shortening<br \/>\n1 1\/2 C. sugar<br \/>\n2 eggs<br \/>\n1 C. mashed bananas<br \/>\nPinch salt<br \/>\n2 C. sifted flour<br \/>\n1 tsp. baking soda<br \/>\n1 tsp. baking powder<br \/>\n1\/2 C. buttermilk<br \/>\n1 tsp. vanilla<br \/>\n1\/2 C. chopped pecans<br \/>\n1 C. shredded coconut<br \/>\n1\/2 C. brown sugar, optional<br \/>\nCreamy nut filling<br \/>\n1\/2 C. sugar<br \/>\n2 Tbsp. flour<br \/>\n1\/2 C. cream<br \/>\n2 Tbsp. butter<br \/>\n1\/2 C. chopped pecans<br \/>\n1\/4 tsp. salt<br \/>\n1 tsp. vanilla<br \/>\nWhite snow frosting<br \/>\n1 egg white<br \/>\n1\/4 C. shortening<br \/>\n1\/4 C. butter<br \/>\n1\/2 tsp. coconut extract<br \/>\n1\/2 tsp. vanilla extract<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Cream together shortening and sugar until fluffy. Add eggs. Beat 2 minutes at medium  speed. Add bananas. Beat 2 minutes. Sift together dry ingredients, add to creamed  mixture along with butter milk and vanilla. Starting with flour. Beat 2 minutes. Stir in  nuts. Turn into 2 greased and floured 9 inch round layer cake pans. Sprinkle 1\/2 C.  coconut on each layer. For the coffee cake sprinkle with 1\/3 C. brown sugar. Bake in  moderate, 350 to 375 degree oven, for 25 to 30 minutes. Cool.  Creamy Nut Filling: Combine ingredients in heavy saucepan. Cook until thickened. Add  pecans, salt and vanilla. Cool.  White Snow Frosting: Cream together egg white, shortening, butter, coconut extract and  vanilla.
