{"id":1466,"date":"2026-02-15T18:41:28","date_gmt":"2026-02-15T18:41:28","guid":{"rendered":"https:\/\/recipe4thecook.com\/\/"},"modified":"2026-02-15T18:41:28","modified_gmt":"2026-02-15T18:41:28","slug":"banana-nut-layer-cake","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/cake\/blog\/2026\/02\/15\/banana-nut-layer-cake\/","title":{"rendered":"Banana Nut Layer Cake"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>1\/2 C. shortening<br \/>\n2 C. sugar<br \/>\n1 egg; plus<br \/>\n1 egg white<br \/>\n1 C. buttermilk<br \/>\n1 C. mashed ripe bananas<br \/>\n2 C. flour<br \/>\n1 tsp. baking soda<br \/>\n1 tsp. salt<br \/>\n1 tsp. vanilla extract<br \/>\n1\/2 C. chopped walnuts<br \/>\nFilling:<br \/>\n1\/4 C. butter or margarine<br \/>\n1\/2 C. packed brown sugar<br \/>\n1\/4 C. flour<br \/>\nPinch salt<br \/>\n3\/4 C. milk<br \/>\n1 egg yolk<br \/>\n1 tsp. vanilla extract<br \/>\n1\/2 C. chopped walnuts<br \/>\nConfectioner&#8217;s sugar<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>In a mixing bowl, cream the shortening and sugar. Beat in egg and egg white. Add  buttermilk and bananas; mix well. Combine flour, baking soda and salt; stir into the  creamed mixture. Add vanilla and nuts. Pour into two greased and floured 9 inch round  baking pans. Bake at 350 degrees for 35 minutes or until cake tests done. Cool in pans 10  minutes before removing to a wire rack. For filling, melt butter and brown sugar in a  saucepan over medium heat. In a small bowl, combine flour and salt with a small amount  of milk; stir until smooth. Add the remaining milk gradually. Add egg yolk and mix well;  stir into saucepan. Cook and stir over medium heat until very thick, about 10 minutes.  Add vanilla and nuts. Cool. Spread between cake layers. Dust with confectioner&#8217;s sugar.  Chill.
